It presents stylish cuisine with a fresh and simple approach to dining; the perfect cookbook for those who are passionate about good food, and who like entertaining at home with fresh ingredients and interesting flavours. For my first book I chose an eclectic but judicious mixture of foods and flavours, with influences ranging from Asian, Middle Eastern, Mediterranean and North African, introducing and demystifying unfamiliar ingredients from pomegranate molasses to tamarind and sumac. The recipes are easy to follow and beautifully captured in photographs by Bill Nichol.
Staying with the format of my cookery classes, I developed a menu for each month of the year, and each month has an entertaining anecdotal introduction. My menus have a seasonal slant - picnic ideas for January, a brunch in June, mid-winter slow cooking in July, ethnic dinners in September and for December, a celebratory feast. In each chapter you’ll find some background on my choices as well as plenty of useful tips and ideas. One thing that I love about this book is the way I was able to make the most of seasonal fruits and vegetables abundantly available in New Zealand.

From Nelson and Blenheim, from Hawkes Bay to Central Otago, Parnell to Wellington, I explored the most popular ‘new-old’ alternatives to the supermarket. Drawing from my travel all over New Zealand, and my many stays in Europe, especially Italy, I created a vibrant cookbook that embodies everything we love about outdoor markets.
Trawling through colourful, eclectic, high quality markets, meeting producers face to face and tracking down the finest produce, with Dinner in a Basket I am inviting you to come with me on a foodie’s journey and providing a tantalizing array of delicious recipes for you to enjoy.
This
cookbook covers six food-producing regions with an introduction to each
and its markets, along with luscious recipes focusing on the ‘in
season’ produce as well as cheeses and olive oils. You’ll find recipes
varying from Tunisian fish tajine, to spring roasted yams with feta and
bacon, zucchini soup with Soba noodle salad, to chocolate fig and walnut
cake. I’ve incorporated delicious flavours from around the world, but
the emphasis is always on freshness, taste and the essence of the
ingredients which you can find at markets all over New Zealand.
